Default Need Help! Power Steering Fluid!

I have an 2001 Audi A6 Quattro 2.8L. I was going to add power steering fluid because of a grinding noise I hear that happens more so when I turn. I checked my fluid the other day and it was empty. (This was after driving) I checked it yesterday morning once I got up and it was a little above max on the dipstick? Then after driving a few miles to work I checked it again, and it was bone dry?

I am new to Audi's and have not experienced this before. Do I put more in or will that flood the system? I do not know if you check the fluid before or after running. I would really appreciate your guys help.

I wanted to add that I just checked it again after driving last night and the car has been sitting for 9 hours. It is back at MIN on the dipstick. At first I thought I had a leak, but how is it that when the car sits, more fluid goes back into it? So confused.
