Turbo is in but...
I'm not driving it anymore untill I find out what's wrong. It maxed out the timing retard on the last run and I'm not risking the motor on another run.

Some cars run totally MAF LESS. I don't know if the UNI programming is written with some kind of safe mode, but my MAF failed... It gave Signal Too Low code (as good as dead). I then tried to run with the MAF unplugged and it ran exactly the same......

A maf is used to determine the mass of the air entering the engine. The air mass information is necessary to calculate and deliver the correct fuel mass to the engine. If you take it out, you are going to run rich no matter what. The ecu doesnt see the signal so it makes sure to add more fuel because it isnt gauging the amount of air flowing which for all it knows could be a crap load of air and make you run lean.. Most ecu's know to add extra fuel if a MAF signal is non existant to prevent it from running lean.. Especially the ecu's that are tuned for forced air induction. Im sure without a maf you are running at least a little rich which in the long term will reduce the life of your cat/02 sensors, and short term hurt your fuel efficiancy.

Your A/F reads below 11 at low RPM under load - this is not right. As full load and 4K RPM you run low 11 AND pull timing due to knock.
This is not right. Get the software sorted out. I do not think this is hardware problem.
Who's chip do you run?
