Default 2001 audi 2.7 turbo

Hi and thank you for the help first of all....
I have a 2001 allroad quattro 2.7 turbo,
I noticed that I drive it for a while and while im driving the temperature gauge is normal but lets say I trun off the car for 2-3 mins than I start it again and u see that the gauge has gone up by 25 or 30.
What could that be? It worries me.

Never had the problem. I would think the thermostat would stay open the the water would circulate AND the electric fan would be running to cool the radiator. It sounds like one of those components is not doing it's job.
