Default Oil temp really high. help!

I have a 2000 A6 2.7t. I was experiencing occasional high temps for oil (300-325) for a few min and then it would drop back down to about 225-250. The temps would drop in about a couple seconds, which i dont think is normal for oil to cool that fast. Lately i've noticed that my temps will go up and they sit around 300-325 all the time and rarely now do i see them come back down. Has anyone heard of the oil temp sensor going bad? What could be the problem here.

Mine did the same thing ('01 A6 2.7t), right before it completely died and showed 0 temperature. The sending unit was the problem child; pretty easy to replace, thankfully.
You're right in thinking oil temps aren't going to swing that fast unless it's -40 or +150 outside.
