Torn CV Boot
So I jacked up the car and took some pictures of the torn boot, and I was wondering if you guys could offer your opinions on what the best plan of action is.

What do you guys think?
Do you think I can get away with just changing the boot, or do you think the joint is damaged?
Should I be driving my car at all with this damage?

It looks like there is still grease in the joint and where it is torn, it doesn't look like you've gotten a lot of crap up in there. Get it fixed as soon as possible and you'll likely save the CV joint. It's not going to hurt to drive your car with a torn boot, but you risk doing more damage to the joint.

Read the notes.. it depends on your the last six numbers of your VIN number. There was a change in 2001, so depending upon when your car was manufactured you'll need one of those.
