1.8 Running Hot
It goes up to the point in the picture after about 5-6 minutes of driving, will stay there for a few minutes before going back down to the middle for about a minute and then returning back up to the point in the picture.
When I got the car about 6 months ago the needle would never go beyond the middle, but I just got it back from the shop after searching for an oil leak they found a coolant leak and replaced the thermostat, gasket, water outlet, and bypass hoses. Coolant was drained and flushed.
It also smells like burning engine coolant after driving now.
Is it safe to drive with the gauge like that or should I get it looked at somewhere else?

Safe: eh, your call. It's a gamble though.
My bet is they replaced the thermostat wrong. It goes in one way and one way only, but can be installed backwards or upside down. Also burping the system might help, not exactly sure

I agree with this advice,if a place did work to your Audi,and it causes an issue,they should have a warranty that will fix the issue that was caused by work they performed.
Yeah let them deal with it. If they won't, burp it first, and check the t-stat if that doesn't do it. Burping it is less invasive and the symptom describes an air bubble. Do the easier work first.
