You could remove the engine cover and use a coilpack cover, that would allow you to see the valve cover.

Actually I'm pretty sure the VG30DETT has been swapped into the Z31 a few times. Greg Dupree (SpecialtyZ in CA) is running one in a 240Z and laying down low 10-sec passes on it.
As for the polishing, you will need to sand. The manifold needs to be glass-smooth to polish out right. It'll never come out right unless you sand and smooth it like crazy.

Correction to Greg's car - it's a 280ZX rather than a 240Z. And it doesn't run 10s - here's an old video of it making a 9.75 pass at over 148mph
