Screw murphy and his law
If it's a clean break then you will need to drill a smaller diameter hole into the broken bolt, then use a tool to get it out. Alternatively I would just drill it out roughly the same size and run a tap through it. Don't drill too deep in either case.

I have the 4th set down, it works fairly well. But with any of these problems, ymmv. Just be careful. and don't wrench so hard next time!

Based on my very limited knowledge of the 2.8, I think what you're talking about is a coolant flange on the back of the engine? My car sat for quite a while when this happened to me (I have a 1.8T)... you know what worked? Use a dremel tool to carefully cut a slot into the busted off screw. You may have to "scratch" the head a little... then insert a flat head screwdriver bit (or a stubby) and unscrew it.
