This seems like an obvious question, but how do you drain the coolant on a B5 S4?

there's an allen head plug in the block back by the bell-housing. i usually just pull the lower radiator hose on the pass side. takes a little muscle, but much easier then the allen head. make sure you cool the car down for at least 3hrs before hand.
