shifting without the clutch is all about matching the revs. you get a feel for where each gear shifts at each RPM point and you dont even need to put the clutch down to shift. If you really know your car you can downshift with out using the clutch too 
Would the installation of a chip have long term effects on the clutch? I'm looking into an APR chip for around 30-40 more hp and after reading this i'm worried the extra power could crack the plate? or is it not enough? Anyway just a thought.

I wouldn't think 30-40 from a chip would do much damage to the tranny, but i never knew the pressure plates were so brittle in the first place. you should be fine. Most chipped 1.8Ts out there don't do tranny upgrades, a lot just stick with the chip and that's it. Keep in mind though, ANY power upgrade will lower the life of your tranny, though you won't notice 30-40.

dude i saw it. jestnomen did a very good job. i requested he do that car for you
shifting without the clutch is hard but mustang driver and drag racers every where do it. i would not recommend this . i refuse to even try it
