So if your turbos were about to blow or have blown (on a 2.7T) would there for sure be oil in the intercoolers? Because I took off the intercooler hoses and my drivers one had at most 2 tablespoons worth and my passengers one was completely dry!

Thats a normal amount to find in the intercoolers. Just blow by. If youre holding boost, not getting smoke and youre not hearing a dentist drill noise, then i'm guessing your turbos are fine.
